Manchow soup whenever we go restaurant in the soup section this soup is on top priority as it has all flovours that to with a bonus of crispy noodles…what extra we need.So this time I thought to prepare this in home as kids went for swimming. So after swimming when my daughter saw the soup a perfect smile comes on her face…hot hot soup wah.So lets get started…

Preparation Time 10 min
Cooking Time 12 to 15 min
Serving Persons 4 to 6
2 tsp oil
1 tsp sugar
3 green chili finely chopped
2 big garlic cloves crushed and finely chopped
1 inch ginger finely chopped
½ cup chopped cabbage
1 small onion chopped
2 french beans finely chopped
2 tbsp chopped carrot
2 tbsp sweet corn kernels
½ cup of chopped green n red capsicum
½ cup tomato puree
2 tbsp cornflour
water to make the slurry
1 tsp black pepper powder
1 tsp vinegar
2 tbsp tomato sauce
1 tbsp chili sauce
1 tbsp soya sauce
Salt to taste
Fried noodles for garnishing
Heat oil,add sugar.
Caramalize the sugar…thenadd chopped ginger,garlic n green chili.
Saute till the garlic turns into golden colour n little roasted.
Now add the chopped cabbage and onion with a pinch of slat.
So that onion is cooked faster.
Add other veggies like carrot,beans,sweet corn and cook for 2 min.
Finally add capsicum sauté this for some time.
Add the tomato puree and let the veggie cooked int his puree for 2 min.
Now add the veg stock to this with all sauces.
Let it boil for some time.
Add the salt,black pepper powder n vinegar.
Inititally the soup is little watery,to make it thicker make a cornflour slurry by adding water to this.
Pour this slurry in the soup and let it cook for some more time.
Its done,serve hot piping soup with crispy fried noodles…
Whatever veggie available in my kitchen counterI used that one…You can use mushroom,celery,spring onion…the options are endless.
You can use normal water also to make the soup instead of veg stock…by adding veg stock it enhance the flavour and increase the nutrients.
I have used the water which I used to boil corn as veg stock.
By adding sugar it gives a caramailze flavour.
By roasting the garlic you will get a burnt garlic flavour.
I have used tomato puree here to reduce the amount of tomato sauce to make it more healthy.
I have removed the seeds of green chili so that it reduce the spicyness but still has flavour.
You can add more soya sauce to make the soup more darker.
Add little salt a s all sauces has salt also.
