Mugudi is nothing but moong dal pakoda…one day I prepared this and while talking with mom got to know about this name in Odia. Same recipes but different names according to the area…it has a crispy crunchy bite in every pakoda…so I liked it somuch. Lets get started

Preparation Time 10 min
Cooking Time 3 to 4 min per batch
Serving Persons 4 to 6

Ingredients Required

2 cups moong dal
2 medium onion chopped
4 green chili chopped
1 tsp cumin seeds
15 to 20 curry leaves
2 tbsp chopped coriander leaves
one inch ginger cut into pieces
2  big garlic cloves
a pinch of asafoetida
Salt to taste

OIL to deep fry

Soak the moong dal for 3 to 4 hours.
Now strain the water completely.
Grind the moongdal to a coarse paste.
Whip it so that it is aerated and more light.
You just put a dollop of batter in water.
If it starts floating,it is light.
Now mix all the rest ingredients to the batter.
Meanwhile heat oil for deep frying.
When oil is properly hot,take a spoon full of batter and carefully dip into hot oil.
In medium flame deep fry these mugudi till it turns into golden colour.
When it is done,remove to an absorbent paper so that excess oil is drained out.
Serve hot with tea and enjoy your evening.

Notes

Strain the water completely from the soaked moong dal and grind to a coarse paste,
So that you get a crispy bite.
Whip the batter for sometime so that it is fluffy and don’t feel heavy after frying.
If you are in a hurry and has to prepare this, just soak the moong dal in lukewarm water for 1 hour…it acts as same
