Today we prepare Jahni Bhaja…Jahni means ridge gourd or turai. It is a famous recipe of Odisha…it is so easy and wuick to prepare n super yummy.Crispy from outside and juicy,soft from inside…so lets get started….

And Kartika Masa i.e. Kartik Month started in Odisha…this full month all are having veg food specially in Odisha area.specially all like to prefer recipes without onion n garlic on some particular dayz,so it is a perfect choice.

Preparation Time 10 min
Cooking Time 5 to 6 min
Serving Persons 4

Ingredients Required

2 medium length turai

(Peeled and cut into 3 inch legth)

1/4 tsp turmeric powder

1/2 tsp red chili powder

1 tsp sesame seeds

2 tbsp rice flour

Water to coat the rice flour mixture

2 green chili slitted

1 tbsp chopped coriander leaves

1 tbsp mustard oil

Black Salt to taste


Add the ingredients part to turai except oil n water.
Mix it well,then add water little by little so that it is well coated on turai.
Now heat the tava and spread oil all over this.
Place the turai one by one inhigh flame,whatever masala left just coat on turai.
After some time make the flame to low to med and cover the lid.
Let it cook till it turns into golden colour.
After 2 to 3 min,remove the lid.
Turn each turai so that it cooks from other side also.
When it turns to golden colour n crispy,remove from tava n serve hot with rice,dal…


If it has big and hard seeds just discard the seed n use.
I use mustard oil for this to enhance the flavour…but you can use any other cooking oil.
By adding rice flour…it gives a nice crust to the outer part.
I cut into big chunks a s turai is cooked faster so in this way it is crispy form outer side and juicy, soft from inside.
By adding little sesame seeds it gives a crunchy bite to the recipe.
You can try with different veggie like potato , brinjal , pumpkin, raw papaya, beans, tondli…or you can mix match these n prepare.
