
Aloo-Parval Curry
This is a popular dish in Odissa…almost there in every odiya marriage function…this is my Mom version…
Ingredients
2 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp cashew nut
1/4 cup chopped or grated coconut
3 med tomatoes cut into cubes
2 green chili chopped
2 med potatoes cut into cubes
8 to 10 parval cut into halves horizontally( if required peel skin little n cut two ends of parval)
1 tbsp+2 tsp oil
1/2 tsp turmeric powder
1/2 tsp red chili powder
1 tsp garam masala
Salt to taste
Procedure
Take 1 tsp oil n bring to smoke point,shallow fry potato n parval in high flame for 3 to 5 min.
Now take coriander n cumin seeds abd dry roast it. Remove to a plate.
Now take 1 tsp oil n saute tomato, green chili, coconut n cashew nut for 2 to 3 min.
Now make a smooth paste of this.
Heat 1 tbsp oil n put the masala n stir it tull oil separates.
Now add veggies with all spices n boil it for 7 to 10 min.
Serve hot with any biryani even if goes well with rice n roti…
