Amba Khatta i.e raw mango that to in this time in India…not possible in winter.But here in Jakarta it is available ,so I prepared it.One south Indian person brings some veggie like drumstick,banana stem,tondli etc.This time he brough raw mango…Here in Jakarta now raining season going on but still mango is avialbale…I show a view of rainy weather also in my video

This is a famous recipe of Odisha…made of raw mangoes.It is a combonation of sour,spicy and sweet…tastes so divine.

You know friends this recipe I learnt from my husband…he is a great chef.Prepares so many yummy recipes…so many dishes I have leanrt from him.But now this recipe is shifted to me as He told now I am in managerial level,I can give guidance only not making any thing…ha ha ha

So now lets dig into recipe details

Preparation Time 10 min
Cooking Time        12-15 min
Serving Persons      4-6

Ingredients

2 medium size raw mangoes

1/2 tsp pancha phoran

1 whole red chili

a pinch  of asafoetida

2 green chili slitted

1 inch ginger crushed

12-15 curry leaves

1/4 tsp turmeric powder

1/2 tsp kashmiri red chili powder

1 tsp cumin red chili rough powder

2 tsp oil

Salt to taste

Water as required

Procedure

Peel the mango and slice it.
Cut into big chunks and keep aside.
Now heat oil ,add pancha phoran,whole red chili broken into two pieces.
Add asafetida,curry leaves,crushed ginger  and green chili also.
After few seconds,add raw mangoes with salt,turmeric powder and kashmiri red chili powder.
Mix well,add water .
When water startsboiling,cover with lid and cook it in low flame till th mangoes are soft.

After osme time,remove the lid,check whether the mangoes are cooked or not.
Insert the spatula on a mango piece,if inserts easily then mango is cooked.
Now add the sugar and mix it properly.
After osme time,you see the consisitency is little thick,mash some mango pieces so that we will get a pulpy texture.
Finaly add cumin red chili rough powder and mix it.
Coook for 1  to 20 min and it is little more thick in consistency.
Now it is done,you can store this for 1 week in the fridge.
Have this yummy khatta with roti,rice,chapathi…

Notes

You can add jiggery instead of sugar.
In our home generally we like peeling the mango and make khatta,if you wish you can keep the cover.
In this way it will retain shape more better.
You can add the mango seed in gravy  i.e tanku it will also tastes yumm.
