Baigana Chakki Bhaja…it is quite famous in Odisha and West Bengal area. It is so quick to prepare and yummy too…so if any guest came you can make it easily. So lets get started…

Serving Persons 4
2 big brinjal(I have taken long purple one and medium green one as large one not available here)
2 tbsp rice flour
1/4 tsp turmeric powder
½ tsp red chili powder
1 tsp kashmiri red chili powder
2 tsp sesame seeds
½ tsp sugar
3 green chili slitted
1 tbsp chopped coriander leaves
1 tsp mustard oil
Black Salt to taste

Cut the both ends of brinjal.
Now cut the brinjal into thick roundels.
Now add all spices,green chili,coriander leaves,flour,oil with little water and mix it well.
Make sure the riceflour mixture is well coated with all the brinjal slices.
Keep for some time for marination.
Heat the tawa and spread oil all over tava.
In high flame place the brinjal slices one by one.
Pour some oil on top of the slices also so that it will not dry.
Make the flame to medium and cover the lid.
Let it cook from one side.
After some time remove the lid and flip all the brinjal slices.
Pour some more oil and let it cook from other side alos.
You can insert the spatula in one brinjal slice to check whether it is properly cooked or not.
If it goes easily then it is cooked.
Serve hot with steamed rice,dal…
Use those brinjals which has less seeds.
Cut into thick slices so that it is little soft inside and crispy outside.
By using mustard oil it enhance the flavour.
By adding sugar to the brinjal slices it enhance the taste.(Tip given by my jethani)
