This is a so easy and yummy recipe ever I have…this one I learnt from my badi jethani.So this yummy yum recipe I dedicate to her.Once we are coming to Odisha in train…and my badi jethani brought lunch box for us.In that menu this dish is there…it is cooled down but still tastes yummy.When I got to know about the recipe…I just surprised ohh is it this simple to prepare…it should be shared so that if you are in hurry,or not in a mood to  prepare  any complicate recipe…this one works a swonder.If any guest comes also…you can serve this as side dish for lunch.So lets get started

Preparation Time 5 min
Frying Time 5 min per batch
Serving Persons  4

Ingredients Required

Purple baingan 300 gm(big size or long baingan)
1 tsp black pepper powder
2 tsp Black Salt
OIL to deep fry

Yah these ingredients only…so less na

Procedure

I have taken here long purple brinjal.
I cut into 3 parts…the length should be 6 to 7 cm.
Then take each part,cut into half vertically.
Then each half part cut into 3 parts vertically.
Remove the brinjal from water and place on a thick cloth so that extra moisture absorbed.
Dip the brinjal pieces in water so that it does not turn into black.
Meanwhile heat oil for deep frying.
Carefully put brinjal pieces one by onein hot oil.
In medium flame deep fry the brinjal pieces till ti turns into golden colour.
Remove to an  absorbent paper so that excess oil is drained out.
Sprinkle black pepper powder and black salt on each piece and serve hot with rice,dal.

Notes

Go for less seed brinjal,it tastes more yummy.
Keep the brinjal slices in water like we keep potatoes,so that it deoes not turn into black.
Cut into thick pieces so that it is crispy from outside and soft from inside.
