I know most of us dont prefer baingan but this one when u taste baingan will be included in your favourite dish.
And as it is baked it has more nutrious value also. This one really goes well both with rice and roti.
Now come to ingredients part
1 med baingan
1 small onion chopped
1 med tomato chopped
2 green chillies chopped
salt to taste
chopped coriander leaves for garnishing
1/8 tsp mustard seeds
1/8 tsp udad dal
1 tsp oil
Bake the baingan in stove or baking tray as per your wish.Turn in between.
When it turns to dark golden colour ,remove it and keep in a tray with water so that it cools down.
Now peel the baingan and mash it properly.
In a fry pan heat oil,add tempering spices.
Add chopped onion and pinch of salt so that onion quickly turns to golden colour.
Add chopped tomato and green chillies, stir till tomato mix properly with onion.
Now add mashed baingan and stir prperly.
Garnish with chopped coriander leaves.
