
Baked Kachori with Aloo Sabji
Ingredients
For Kachori
2 cup maida
1 tsp ajwain
1 tbsp oil
Salt to taste
Water to make dough
For Stuffing Part
1 tsp oil
1 tsp red chili powder
1 tsp jeera powder
1 tsp dhania powder
1 tsp garam masala
1/4 tsp amchoor powder
1/4 tsp haldi
2 tbsp water
1 cup soaked moongdaal
Salt to taste
1/2 cup chopped coriander leaves
Oil to brush on kachori n baking plate
For Aloo Curry
2 tsp oil
1 red chili whole broken into pieces
1/2 tsp mustard seeds
1/4 tsp cumin seeds
1 tbsp ginger garlic paste
2 med onion chopped
3 med tomatoes chopped
2 green chili slitted
2 big potatoes peeled n cut into small cubes
1 tsp garam masala
2 tsp dhania powder
1 tsp jeera powder
1/4 tsp haldi
1/2 tsp red chili powder
Salt to taste
2 cups hot water to make gravy
1/4 cup chopped coriander leaves
Coriander leaf for garnishing
Procedure
For Stuffing
Heat oil n add all spices,mix well.
Saute for 30 sec n add water so that it wont get burnt…saute for 3 min.
Now add soaked moongdaal n stir for 5 to 7 min so that it is parboiled.
Now add salt n coriander leaves, mix well.
Make it cool down.
For Kachori
Take maida, add ajwain,salt n oil to this.
Rub with hand so that oil incorporated with each particle of maida…by this kachori is more khasta…
Now we add water to make dough…knead well.
Rest the dough for 15 min n meantime stuffing is cooled down.
Now make dumplings out of the dough n press the sides of dumpling with fingers so that the center part is little thick.
Fill the center with 1tbsp of stuffing n seal it frpm all sides as shown in pic.
Now do for rest kachoris.
Meantime preheat otg in bake mode 250c for 10 min.
Place aluminium foil on baking tray n brush it with oil.
Place kachoris n brush upper part with oil.
Bake it for 20 min at 180c…its ready
For Aloo Curry
Heat oil n add mustard seeds n cumin seeds with red chili.
When mustard seeds start crackle add chopped onion n green chili with salt.
Saute till onion become lil brown. Now add ginger garlic paste to this n saute for 30 sec.
Add chopped tomato n stir till it becomes lil paste…
Now add potatoes with all spices n mix well.
Add hot water n pressure cook for 1 siti in high flame.
When pressure release remove lid n boil the curry.
Add chopped coriander leaves n mix well.
Serve baked kachori with aloo sabji n garnish with coriander leaves…
