This one my husband used to have in Kerala during his posting…
it looks colourful with out adding any spices due to beetroot
1/2 cup beetroot cut into cubes
1/2 cup potatoes cut into cubes
2 green chili slitted
6-8 curry leaves
1/4 tsp mustard seeds
1/4 tsp udad dal
1 tsp oil
3 tsp grated coconut
salt to taste
Heat oil,add mustard seeds,udad dal,green chili n curry leaves.
When mustard seeds start crackle,add beetroot n potatoes.
Cover the lid for 5-7 min,Stir in between.
Add salt n grated coconut,mix it.
Garnish with grated coconut,serve with rice n dal.
