Serving Persons 4-6
1 medium onion chopped
2 tbsp chopped capsicum
1/3 cup grated beetroot
2 green chili chopped
1 tbsp chopped coriander leaves
1 tsp lemon juice
1/2 tsp mustard seeds
1/2 tsp moong dal
10-12 curry leaves
1/4 tsp turmeric powder
1 tbsp oil
Salt to taste
Heat oil, add mustard seeds n udad dal.
When mustard seeds start crackle, add chopped green chili n curry leaves with cahsenuts, sauté till cashews turn golden in colour.
Now add chopped onion with pinch of salt so that onion is cooked faster.
Now add grated beetroot n cook for some time.
Next goes in chopped capsicum n sauté for few seconds.
Add turmeric powder n salt with the cooked rice and mix it well.
Finally add chopped coriander leaves n lemon juice, mix well.
This is the best use of leftover rice, I have used fresh rice here.
So make sure that the rice is completely cool down before adding to the beetroot mixture, otherwise it will break.
While cooking the rice I have added salt, lemon juice n oil so that the rice grains remain separated.
I have used steel pan here as it is more healthy n safe comparing to other pans…make sure the pan thickness is more otherwise the food gets burnt.
