You know friends Bhatura I have tasted first time after my marriage…we husband wife went to a restaurant to taste this. Such a sweet memory that one and today I will show you how to make bhatura…he he he

I will show you some tips and tricks so that you will get a pefect fluffy and soft bhatura and it will remain puffed up for loner time also…so lets get started

Kneading Time 10 min
Frying Time         2 min per bhatura
Serving Persons 4 to 6

Ingredients

4 cups maida
1/3 cup buttermilk
1/2 cup sooji
2 tbsp oil for dough
1 tsp baking powder
1/4 tsp carom seeds
Salt to taste
OIL to deepfry

Procedure

Now in a broad vessel take the maida,salt,oil,baking powder.
Add the buttermilk little by little,knead it.
In the middle just add the sooji and knead it properly,to make a soft medium dough.
Finally add 1 tsp oil to the dough so that it will not dry.
Rest the dough atleast for 2 hours. (I hv kept 4 hrs)
Now make medium size dumpling from it and cover the rest dough.
Roll the dumpling from all sides so that it will get even thickness.
Meanwhile heat oil for deep frying.
Make all other bhatura also.
Now place the bhatura into the hot oil carefully,slowly it starts to float in oil.
Press the spatula on bhatura slowly so that it is puffed up fully.
Now turn from other sides and let it fry till golden in colour.
Remove from hot oil and place the bhatura on absorbent paper so that excess oil is drained out.
Serve hot with chole and some onion slices…

Notes

When you knead the dough,take a broad vessel.
It is easy to knead the dough.
More the resting time of dough,the bhaura will be more fluffy.
Make sure that roll from all sides,otherwise the center part is thinner.
Put the bhatura carefully into hot oil,otherwise there is a chance of spillage.
Before putting the bhatura inside hot oil,roll it again.
As maida has gluten,bhatura shrinks.
Press the spatula slowly n bhatura,in this way it is puffed up.
Generally bhatura is made bigger insize,but I have made small dumpling as my kadai is smaller in size.
