Chettinad Baby Potatoes Fry I Party Starter I roshnscuisine

This is a perfect party starter…you know friends I am taking this for my friends for aen evening snacks…chettinad powder is a famous masala…you can use in many dishes. It is prepared in different ways and I follow the simple way which can be easily prepared in home with home ingredients…jus tdry roast dhania,jeera,red chili,udad dal,sounf,balck pepper  n grind to a coarse powder.So lets get started

Preparation Time 10 min
Cooking Time 12 to 15 min
Serving Persons 4 to 6

Ingredients required

12-15 baby potatoes
(boiled in salt water n peeled)
1 medium onion chopped
2-3  green chili slitted
12-15 curry leaves
 1 tbsp chopped coriander leaves
3 tbsp chettinad powder
½ tsp mustard seeds
¼ tsp cumin seeds
1 tsp udad dal
2 tsp chana dal
a pinch of asafoetida
2 tbsp oil
Salt to taste

Heat oil,add all tadka ingredients.
When mustard seeds start crackle,add green chili n curry leaves.
Then add chopped onion with a pinch of salt so that it is cooked faster.
When onion turns into little golden olour,add turmeric powder n sauté little.
Then add boiled baby potatoes and let it cook in low flame till it turns into crispy and golden colour.
Then add chettinad masala and sauté this so that it is well coated with all baby potatoes and sauté for some time.
Add chopped coriander leaves n serve hot…
You can insert a tooth pick in eachbaby potato and serve a s a party starter.

You can make the chettinad powder in large quantity and store…it remains fresh for long time.
Dry roast the ingredients for chettinad masala…and grind to a coarse powder.
Dry roat the baby potatoes in low flame so that it is crispy n golden in colour.
I have used steel pan here as it is harmless n healthy…comparing to fry pans.
Try to use thick steel pan…otherwise the masla will get burnt.
