This time hubby dear bought 3 coloured capsicum so thought ot make some Indochinese dishes…so this one is here Chili Potatoes.It is crispy juicy…mixture of all sauces a perfect party starter…So lets get started

2 medium size potatoes cut  into frenchfry  shape
2 green chili chopped
3 big garlic cloves chopped
1 inch ginger chopped
2 green chili slitted
1 medium onion sliced
1 cup capsicum sliced(I have taken green,red n yellow)
1 tsp ginger paste
1 tsp garlic paste
3 tbsp tomato sauce
2 tbsp red chili sauce
1 tbsp green chili sauce
3 tsp soya suace
2/3 cup maida
1/3 cup corn flour
1/3 cup rice flour
1 tsp kashmiri red chili powder
½ tsp black pepper powder
1 tbsp oil
Salt to taste
OIL to deep fry the potatoes
Sesame seeds for garnishing

Peel the potatoes and cut like french-fry strips…little thick.
Then put all potatoes in water os that it does not turn into black.
Now boil water with little salt.
When it starts boiling add potatoes and arboil it for 2 to 3 min.
Turn off flame and keep this as it is covered for some time.
Strain the water and add 2 tbsp maida,a pinch of black pepper powder,1 tsp soya sauce and salt.
Mix it well with the potatoes so that it is well coated.
Now make a thick batter of maida,cornflour,rice flour,kashmiri red chi powder and salt with little water.
Add all the potatoes to this batter,meanwhile heat oil for deep frying.
In low to medium flame put potato strips one by one so that it will not stick to each other.
Half fry till it turns into light golden colour.
Remove from oil and make it cool down little bit.
Again fry this till it turns into golden colour and crispy…
Meanwhile we make the indo Chinese mixture.
Heat oil,add chopped ginger,garlic n green chili.
Saute for few seconds,add sliced onion,slitted green chili with little salt so that onion is cooked faster.
Saute in high flame,then add the sliced 3 coloured capsicum.
When it is done,add all sauces with black pepper and mix it well.
In high flame only,add the fried potatoes to the mixture and sauté in high flame for 2 min.
Garnish with sesame seeds…serve hot

Notes

Cut the potatoes little thick so that when it is fried it is crispy from outside and soft from inside.
Make sure the batter is little thick so that it is well coated on each potatoes while frying.
When we parboil he potatoes…it has moisture so when it is fried…to become crispy it takes longer time and remain crispy fo rlonge rperiod.
Deepfry the potatoes two times to make it more crispy.
If you are making for a party,just half fry the potatoes and prepare the Chinese mixture,before guests arrive,just do the rest part.
Just coat the potatoes with dry maida,so tha tit gives a proper coating to potatoes.
Make sure when you sauté the veggie the flame should be high,in this way the veggie is half cooked and crunchy.
You can add spring onion also.
I have take kashmiri red chili powder to give a colour and it is less spicy.
You can add red food colour also.
If youw nat to make it less spicy just dicard the seeds of green chili and use it.
Use less salt as sauces have also salt.
