Chuin aloo bhajanothing but drumstick potato masala…we call muniga also in our home.As we stay outside of India..it is difficult to get all veggies,so one person is there who brings some veggies which is not available in our local market…so yday he came to our home and brought drumstick.

So I thought why not recording this recipe…this is a golden chance.No idea when I get drumstick again…so lets get started

Ingredients

1 medium potato peeled n cut into 1 inch thick frenchyfry cuts

7-8 drumstick peeled and cut into 3 inch length

1 medium onion finely choped

2 medium tomatoes finely chopped

3 green chili slitted

2 tsp ginger-garlic paste

1/2 tsp turmeric powder

1 tsp garam masala

1/2 tsp red chili powder

1 tsp kashmiri red chili powder

1 tbsp chopped coriander leaves

Salt to taste
2 tsp mustard oil

1/2 tsp mustard seeds

1/2 tsp cumin seeds

1 whole red chili broken into pieces

a pinch of asafoetida

Procedure

First peel the drumstick using a knife.
Then cut both ends,and cut into 3 inch length,then just break the portion.
In this way whatever left peeling is there it is easily removed.
Boil little water with a pinch of salt.
Now parboil the drumstick and potato.
Then strain the water.
In a fry pan,heat mustard oil.
When it is properly hot,add musard seeds,cumin seeds,red chili with asafoetida.
When mustard seeds start splutter,add ginger-garlic paste with green chili,sauté for few seconds.
Then add chopped onion with a pinch of salt,so that it is cooked faster.
Now when onion is cooked,add chopped tomatoes with all spice masalas.
Mix it well and cook it covered till all tomatoes become a paste like consistency.
Now add the parboiled potato and drumstick,mix it well.
Let it cook covered for few more minutes.
If you feel it little dry,add the strained veggie water.
Finally add chopped coriander leaves and serve hot with rice,dal…

Notes

Peel the drumstick properly,otherwise it is not tasty and difficult to eat.
After parboiling,strain the water.
But don’t throw the water,use for daal,any gravy recipe or soup…it is very healthy.
Always try to cook the recipe covering the lid,in this way it is cooked faster and the consumption of gas also less.
