Dahi Baigana you can say this Dahi Baingan…today I will show you how to prepare in Odia style.It is a must dish in Odia marriage party,functions…and easy to prepare.You can prepare this in for a side dish,for a brunch party…So lets get started

Preparation Time 5 min
Cooking Time 10 min
Serving Persons 4

Ingredients

1 big purple brinjal pieces(cut into 4 inch length)
3 cups thick curd
3 green chili slitted
½ tsp kashmiri red chili powder
1 tbsp sugar
1 tbsp chopped coriander leaves
Salt to taste
OIL to deep fry
For Tadka

2 tsp oil
1 whole red chili
1 tsp pancha phoran
a pinch of asafoetida
10-12 curry leaves

Procedure

Cut the brinjal into 4 inch length…
Then take one piece and cut into half vertically…
Then make one more half vertically so in one piece you can get 4 small pieces of brinjal.
Meanwhile heat oil for deep frying .
Whisk the curd properly and add the rest ingredients to this.
Mix it well.
Put brinjals one by one and deep fry till it turns into golden colour.
Add the fried brinjal to the curd mixture and mix it carefully.
Make the tadka now.
Heat oil,add pancha phoran,red chili,curry leaves with asafoetida.
When mustard seeds start crackle add this to brinjal mixture.

Sprinkle some cumin red chili powder on this…

Notes

Cut the brinjal little thick so that it is crispy from outside and soft from inside.
Whisk the curd properly.
Add sugar according to sourness of curd…better to take fresh curd.
If you don’t like it sweet skip the sugar part.
You can shallow fry the brinjal also for healthy version, just make sure the brinjal slice is little thin. 
if you are making large quantity make sure dip the brinjal in water so tha tit doesnot turn into black.
