Eggless Muffins recipe/Easy n Moist Vanilla Cupcakes in otg/eggless cupcakes in hindi/roshniscuisine

So my vegetarian friends no need to worry…you can also have vanilla moist muffins that to eggless and it is super tasty.And you know friends no butter,no condensed milk,no soda water…whatever the basic ingredients available for baking you can bake easily eggless muffins in home.

From some dayz my son also wants cupcakes for school tiffin box so I baked it and did the recording also…in this video I have discussed about some baking tips nd I have shown how to use oven with all knob details so that it is helpful for a beginner.So what we are waiting for.

Preparation Time 10 min
Baking Time          20 min
Serving Persons     4

Ingredients

1 cups APF or maida

1 cup powdered sugar

1 tsp baking powder

½  tsp baking soda

¼  tsp salt

¾  cup milk and curd

¼  cup oil

¾  tbsp vinegar

1 tsp vanilla essence

2 tbsp malai

Oil to apply on moulds

Procedure

First take all the dry ingredients in a seiver and sieve it .
This is a important point…by sieving we can remove any rough particles.
And in this way all dry ingredients mixed properly so that it helps the cake to rise.
After sieving if you find any big chunks then press it with hands and sieve it.
Finally when you see any rough particles just sieve it…so that our dry flour is completely smooth.
Now in a wide bowl take oil,milk and curd.
Whisk it properly for atleast 3 to 5 min,so that milk,curd n malai well mixed with oil.
It is also an important point…it gives the same texture of egg as we are making eggless cake.
Now add vinegar and vanilla essence and mix it well.
Add half of dry flour with cut and fold method,in this way air bubbles produced to help the cake to fluffy.
Don’t add full dry flour at a time,otherwise it is not mixed properly.
Menawhile preheat the otg in baking mode for 10 min at 180 degree.
Now grease  the silicon muffins with oil.
Fill the muffins upto 3/4th as it rises to volume while baking.
Then tap it so that if thereis any air bubble it gone.
Now bake the muffins at 180 degree for 20 min.
Insert a toothpick to check wheather it is properly baked or not,if it comes out clean then baking is done.
Take out from otg and place on a cooling rack.
When It is cooled down little,demould it.
Enjoy your cupcakes…

Notes

Keep an eye on your oven as oven to oven temperature varies and according to that timing also.
Baking mode means both rods are on so always cakes a re baked in baking mode to get heat from both sides.
When we did the pizza we just melting pizza then we use grilling mode means the upper rod is heated.
Thiw one I used when I want a crust in my cakes also.
You can add dry fruit salso to enhance the flavour.
You can use milkmaid instead of milk.
By adding malai it is more richer in taste.
I am using water initially instead of milk,but by adding milk it is more tasty and rich in flavour.and by adding curd,cake is more soft.
You can add lemon juice also to enhance the flavour.
You can prepare chocolate muffins in same way just replace ½ cup maida with coco powder.
You can add choco chips to make it more exciting.
If using aluminium moulds,use butter paper to demould it easily.
If you don’t have butter paper just grease the mould and dust dry flour…it also works fine.
If you are using silicon mould,no need to use butter paper.
