Gobi Aloo Masala/पार्टी स्टायल आलू गोभी लेकिन कम तेल में बनी/Dhaba Style Aloo Gobhi/roshniscuisine

So today I prepare Gobi Aloo masala that to in dhaba style but with a healthy twist.
This is one of my favourite recipe and now my daughter also like it so much…so lets get started

Preparation Time 15 min
Cooking time 35 to 40 min
Serving Persons   4 to 6

Ingredients

2 medium potatoes cut into French fry style
1 medium size cauliflower soaked in hot water(I add salt and turmeric powder)
2 medium onion finely chopped
4 medium tomatoes
3 green chili
2 tsp ginger-garlic paste
2 tbsp chopped coriander leaves
Black Salt to taste
¼ cup+1 tbsp mustard oil

½ tsp turmeric powder
¼ tsp red chili powder
½ tsp kashmiri red chili powder
½ tsp cumin powder
1 tsp garam masala
½ tbsp coriander powder
2 bay leaves
2 inch cinnamon stick1 big cardamom
1 tsp cumin seeds

Procedure

Take ¼ cup oil and in high flame sauté the veggie batch wise so that it is half cooked and crispy also.
Grind to a smooth puree of tomatoes and green chili.
Now in the same pan add rest oil,add bayleaves,big cardamom,cinnamon,cumin seeds.
When cumin seeds start splutter add chopped onion with a pinch of salt so that it is cooked fast.
Now add ginger–gralic paste and sauté for some time.
Next goes in all the spices,salt except garam masala and mix it well.
Next add the veggies and mix this.
Let it cook in low flame for some time.
Finally add garam masala and chopped coriander leaves and mix it.
Serve hot with garma garam roti,chapathi…
Now goes in the tomato and green chili paste to this and mix it well.
Let it cook for some time till the tomato juice is well absorbed by the veggie.

Notes

Soak the cauliflower in hot water,mixed with salt and turmeric powder,so that it is properly cleaned.
Shallow fry in high flame so that it is half cooked and crispy also.
In this way it is more healthy rather than frying in oil.
Add garam masala at last to retainthe flacour.
Adding of tomato puree after the veggie,it helps to cook the veggie properly .
I have used handy chopper here to chop the onion finely..other veggie also u can use.
It is used for cutlet,for garnishing on chaat,dosa,any gravy recipe.
