This is one more favourite recipeof my husband dear…This one you can call it bharwa baingan bu t it is Odisha style bharwa baingan,instead of masala we stuff veggi mixture inside brinjal…so lets get started this yummy n new recipe

Ingredients
8 medium size brinjals
2 large potatoes finely chopped
2 medium onions finely chopped
3 large tomatoes finely chopped
3 green chili finely chopped
2 tsp ginger-garlic paste
5-7 coriander springs
2 tbsp oil
1/2 tsp cumin seeds
2 tsp coriander powder
1 tsp garam masala
1/4 tsp turmeric powder
1/2 tsp red chili powder
1 tsp kashmiri red chili powder
Salt to taste
Procedure
Cut the stem of brinjal into half,just keep 2 inches and trim the side parts of stem also.
Then cut the main body of brinjal into half horizontally keeping the stem intact,then from other sides also,so total 4 cuts.
So that we can easily stuff the veggie masala into brinjal.
Now make the veggie mixture by adding all rest ingredients except oi and cumin seeds.
Stuff this veggie mixture inside the brinjal carefully.
Now in a pan heat oil.
Add cumin seeds,when it starts splutter,place the stuffed brinjal one by one.
Add the rest veggie mixture,if left.
Now cover the pan and cook in low flame.
After some time,remove the pan and turn the brinjal from upside down.
You have to repeat the process till the brijals and veggies are properly cooked.
We want a little roasted and caramelized flavour, so after it done also I keep on cooking for more 5 to 7 min.
Serve hot with rice,dal,roti…
Notes
If you like more stuffing you can stuff it , but stuff carefully otherwise the stem is broken.
In our home we ike the veggie mixture,so after the stuffing part done,I cook the veggi masala with brinjal.
If you are in a hurry,just give one siti in cooker,and shallow fry on tava.
But it is preferable to make it in low flame to enhance the flavour.
Before stuffing check for any insect inside brinjal.
Take equal size of brinjal preferable medium size,so that it is cooked evenly and quick.
