When we were in India…whenever I want to prepare some paneer recipes…bring paneer from outside and make paneer dises in home…the problem started when we shifted to Jakarta…here paneer is available but it is frozen not soft as fresh paneer…sp always I am wondering how to prepare paneer in home

So one day we frndz just chitchat…one of my friend Rajani ji told ohhh paneer making so easy…she just taught me how to prepare and from that day I prepare paneer in home

Thanks one more my friend Tejal also for giving me one useful tip how to prepare soft paneer…so do watch my video for this recipe and tip

Table of contents

1:40 – see how to curdle the milk

3:09 – how to set paneer
Now coming to recipe detail…

Preparation Time 2 min
Cooking Time 10 min

Ingredients Required

1 litre milk
2 tsp vinegar
1/2 cup water
A muslin cloth

Procedure

Boil the milk…make it cool down.
Keep in freeze…so that a thick layer of malai set.
Remove the malai from milk and again boil the milk.
Now when it start boiling turn off the gas.
Bring the milk to a lukewarm temperature.
You can see a thin layer of malai set…remove that.
Add the vinegar to water and mix well.
Pour this vinegar mixture into the milk and stir the spoon slowy.
After sometime the milk started to curdle and you can see a light green colour water.
Paneer or chenna is separated from the water.
Keep this as it is for sometime.
The paneer settles down.
Strain the paneer water.
On a vessel pace a muslin cloth and pour the paneer mixture so that excess water is removed.
Now pour some water on paneer so that the vinegar smell gone…
Now bind the cloth and squeeze the paneer water as much as m possible.
Place a heavy weight on the muslin cloth…I use the technique(Take a big vessel with full of water).
It should be place maximum for 2 min, then take out the paneer from muslin cloth.
It is properly set…remove extra from all sides to get an even size cut.
Your homemade paneer done…cut into desired shapes

Notes:

Keep the weight maximum for 2 min, otherwise the paneer will be hard.
Whatever extra you removed form all sides, you can use that for paneer bhurji, crumbled paneer, some dessert item or just add some sugar and have it.You can place any heavy weight…I follow this method
