
Mahankia(Home Curry)
This is my favorite curry
Whenever mom made this curry i tell her keep some more rice for me i will have this in dinner also
So from this u can guess how yummy it is
Now come to ingredient s part
Medium size potatoes 2
Small carrot 1
French beans 7-8
Medium size Brinjal 1
Ridege gourd medium size 1
Medium size Tomatoes 2
Green chillies 2-3
Chopeed coriander leaves ¼ cup
Salt to taste
Turmeric powder 1/8 tsp
For Tadka
1 tsp oil
1/8tsp mustard seeds
¼ tsp udad dal
¼ tsp cumin seeds
1 red chilli broken into pieces
For Mahankia Powder
1 cup udad dal
1/3 cup cumin seeds
1 tsp fennel seeds
1 pinch asafoetida
10 whole red chillies
Procedure
In a fry pan add udad dal .
When it turns to golden colour, add cumin seeds, fennel seeds,red chillies and asafetida ,stir properly.
Turn off gas, make it cool down.
In a blender blend it to rough powder. Store in a air tight container.
Now for curry
Cut all vegetable into big pieces.
Keep potatoes in water to avoid becoming blackish.
Then heat oil in pressure cooker, add all tadka spieces.
When mustard seeds start splutter add all vegetables.
In another bowl boil water and add salt, turmeric powder.
Add this water to vegetables and stir properly.
Cover the lid , wait for two siti.
Then turn off gas , remove lid immediately.
Add mahnkia powder to this and mix it propely ,again boil.
Garnish with chopped coriander leaves.
Have this with steamed rice.
