if some guest will come without prior information this masala vada helps you…my personal experience
1 cup udad dal
1/4 cup chana dal
2 green chillis
1/2 inch ginger
6-8 curry leaves
1/4 cup chopped cabbage
1/4 cup chopped onion
1/2 inch ginger grated
chopped coriander leaves
1/4 cup rawa
a pinch of soda
a pinch of hing
salt to taste
oil for deep fry
Soak udad dal for 2 hrs(if immediately if u hv to prepare soak it with hot water it will be soaked with in 30 min)
Then make a thick paste adding little little water.
In the mean time soak chanadal.
Now take little batter and pour in a bowl of water.
If it rest in bottom your batter is not good.
So stir it in one direction to make it foamy as shown in pic.
Now take little and pour this in water,if it floats your batter is perfect.
Now add all the rest ingredients to the batter and mix properly.
Heat oil, take a bowl of water.
Wet your palm and take batter in hand and make vada shape.
fry this in medium flame till golden brown color.
Your masala vada is ready to serve.
