Mix Veg…it is well goes with roti, naan, puri…so this time I prepared this for a Bachelor Party…so hubby dear told do the video recording also of this. But as it is for a party the quantity are large so I am not ready for recording. But later thought lets do the recording too while preparing…two works in one time. As I prepared this for the party…so I took in large quantity. But in the Ingredients part I will give the quantity for 4 to 6 persons…so that it is easier to prepare. So lets get started…

Cooing Time 40 to 45 min
Serving Persons 4 to 6
2 medium onions finely chopped
3 medium tomatoes grated
2 medium potatoes cut into cubes
10-12 cauliflower florets
1 medium brinjal cut into cubes
¼ cup French beans
¼ cup carrot cubes
¼ cup beetroot cubes
¼ cup green peas
1 small capsicum cut into chunks
5-6 paneer cubes
2 tbsp chopped coriander leaves
3 to 4 green chili chopped
1 inch ginger
2 big garlic cloves
2 tbsp poppy seeds
1 tsp cumin seeds
a pinch of asafoetida
1 bay leaf
1 inch cinamom stick
1 star anise
2 small cardamoms
3 to 4 black pepper
2 tsp coriander powder
1 tsp garam masala
½ tsp turmeric powder
¼ tsp red chili powder
½ tsp kashmiri red chili powder
3 tbsp oil
Salt to taste
OIL to deep fry the veggie
Soak poppy seeds, ginger, garlic for 10 to 15 min and grind to a smooth paste.
Heat oil and add all khada masala, cumin seeds n asafoetida.
When cumin seeds start splutter add chopped green chili.
Then add chopped onion with little salt so that onion is cooked faster.
When onion turns into golden olour,add the grated tomatoes and let it cook.
Add the poppy seeds paste to this…let it cook for some time.
Add all spice powders except garam masala…mix it well.
Meanwhile deep fry all veggie except beetroot,green peas,capsicum…
I have removed to a big kadai as the quantity is more…
The pan I have used to cook onion tomato mixture, just add little oil.
And shallow fry the paneer cubes.
When onion tomato mixture is properly cooked…you can see oil start loosing.
Now add green peas, beetroot, capsicum to onion tomato masala n cook for some time.
Add hot water to this mixture and cook this for a while.
Now add the fried veggie…mix it well.
Finally add garam masala n chopped coriander leaves .
Serve hot with garma garam roti…
Whenever you deep fry anything, just make the flame high when you put the stuff into hot oil.
The same rule applied whenever you remove the stuff from hot oil too…in between you set the flame low, medium or high as per the requirement of recipe.
In this way it absorbs less oil.
After deep frying the veggies I just put on the tava as it is without using any tissue paper as it is deep fried as raw only so I feel it may stick to the paper.
While deep frying the veggie take small quantity of veggie in the frying spoon and pour into hot oil for safer side…in this way oil will not splutter on hands.
In the same pan only I shallow fry the paneer so that whatever masala left on pan it will coated on paneer and make it more flavourfull.
I added the green peas as it is to the onion tomato mixture as it is frozen so it is well cooked with this only.
I have added beetroot for colour and int his way kids have beetroot too.
I have added the capsicum also directly to the onion tomato mixture,in this way it gives a crunchy bite.
Add garam amsala at the end to retain its flavour.
I have added kashmiri red chili powder for colour and it is less spicy.
Here I have grated the tomato,in this way it has some chunks and we can easily discard the peel.
Here I have deep fried the veggies as it is dhaba style but for healthy purpose you can parboil the veggie and shallow fry too.
You can use cashewnut paste also instead of poppy seeds.
Make the smooth pasteof poppy seeds so soak in less water…if it is coarse it does not taste nice.
If you are in hurry,add little hot water to the poppy seeds.
