One weekend husband and kids went for swimming,and after swimming all wants something hot,yummy.But still it should be healthy…so thought to prepare this.And my family members just love this.So thought to do recording next time and here it is…

Preparation Time 15 min
Cooking Time 20 to 25 min
Serving Persons 4

Ingredients

2 tbsp oil+ghee

2 bay leaves,3 cardamom

1 cinamon stick

3 cloves,5 black pepper

2 medium onion sliced

1 tbsp ginger-garlic paste
1/2 tsp sugar

1/4  tsp turmeric powder

1/2 tsp garam masala

1 n 1/2 cups basmati rice

2 cups water

250 gm mushrooms

1/4 tsp cumin seeds

3 green chili chopped

1 cup tomato puree

1 tsp lemon juice

10-12 mint leaves

1 tbsp chopped coriander leaves

Salt to taste
Procedure

Heat oil and ghee to the fry pan.
When it is properly hot,add all khade masala,sauté for few seconds.
Now add chopped green chili and cumin seeds to this and sauté.
Add the sliced onion with salt and sugar.
By adding sugar it will have a caramelized flavour ad due to salt it is cooked faster.
When onion is cooked,addginger-garlic paste.
Now add the cut mushroom and mix it well.
Add the turmeric powder,tomato puree and mint leaves  with chopped coriander rleaves.
Mix these properly and let it cook for some time.
Meanwhile soak the rice for 15 min.
Add the rice to the mixture and mix it.
Now add salt,garam masala,lemon juice to this.
Let it cook for 2 min in high flame.
Then add water and let it boil.
When it start boiling make the flame low and cover it.
In between remove the lid and stir it .
When the water is properly absorbed it is ready to serve.
Finally add chopped coriander leaves to this.

Notes

Add less water proportion to rice as we add tomato puree and mushroom ahs also lots of water content.
You can add green peas,paneer,baby corn…to  make more variations.
Add the rice to mushroom mixture and sauté for sometime so that the mushroom flavour well goes to rice.
Soak the mushrooms in salt and turmeric water for 15 min.
if mushroom is big in size cut into quarters otherwise cut into halves.
By adding lemon juice the rice grain remain seprated.
