Noe healt oil in a pan,add cumin seeds and ginger-garlic paste.
Saute this for 30 seconds and then add chopped onion with a pinch of salt so that onion is cooked faster.
When onion turns to light golden colour add all masalas and let it cook for some time.
Add boiled matar-aloo to this and mix it well.
Add hot water to this…and let it boil for some time.
Make a slurry of besan by adding water to this.
When the curry starts boiling add the slurry and let it cook for 2 min.
It thickens the curry.
Now the chaat preparation time.
Take 3 to 4 big spoon of curry into a plate, crush the nimki on this.
Add onion, tomatoes n green chili with little black salt.
Sprinkle red chili powder.
Then top with lots of mixture.
Finally garnish with chopped coriander leaves, chaat masala and lemon juice…and enjoy Odia Style Ghuguni Chaat.
You can use small nimki(diamond shape) or papdi also instead of nimki.
You can add little curd and sweet chutney…but we prefer in this way.
By adding besan slurry the curry is little thick in consistency and enhance the flavour.
Add hot water to the boiled matar-aloo mixture instead of normal water …it enhance the flavour
