Pav Bhaji all time favourite recipe…here I show you how to prepare this in street style soft pav with perfect buttery bhaji . I used to watch so many street style food…there I got to know why the pav bhaji is so tasty in street side, so I share here all tips n tricks. My hubby who is not so fond of pav bhaji he also liked it so much…so what we are waiting for. Lets get started…
You know friends when I” was planning ot do recording for this so many hurdles I go through , here as rainy season going on, suddenly from morning cloudy weather started .I afraid to get some nice pictures of my recipe as I prefer natural sunlight, then previous night wanna to boil potato…but only a single potato in my veggie box. Then as on next day its raining heavily my hubby ordered the veggie and it is delivered late, then pav came in afternoon…so many things. But at last I finished my recording successfully.

Cooking Time 40 to 45 min
Serving Persons 4 to 6
4 to 6 Pavs
4 medium potatoes boiled(Peeled n Mashed)
2 medium onion finely chopped
4 medium tomatoes finely chopped
2 tsp ginger-garlic paste
4 green chili chopped
¼ cup green peas
¼ cup cauliflower florets
¼ cup carrot cubes
¼ cup beans cut into ½ inch length
2 tbsp beetroot cubes
¼ cup capsicum chopped
½ tsp turmeric powder
1 tsp red chili powder
1 tsp kashmiri red chili powder
3 tsp pav bhaji masala
½ cup chopped coriander leaves
2 tbsp oil
¼ cup butter
Salt to taste
Water to make gravy

Peel the boiled potatoes n mash it.
Boil the veggie with salted water.
Heat oil n little butter, add ginger garlic paste n chopped green chili, sauté for few seconds.
Now add chopped onion with a pinch of salt so that onion is cooked faster.
When onion turns into golden colour, add chopped tomatoes and let it cook properly so that it starts leaving oil.
Meanwhile strain the water form boiled veggie and mash it with potato masher.
Next we add turmeric powder, red chili n kashmiri red chili powder to onion tomato mixture and mix it well.
Kashmiri red chili powder I have used for colour.
Next add the mashed veggie and let it cook for some time.
Next I add the frozen peas as it is parboiled so don’t take more time to cook.
Then add mashed potatoes n mix it well.
Now capsicum will be added,I added last as it takes less time to cook and we get a crunchy bite also.
Add the strained water form veggie to get the colour.
Let it cook for some time.
Now add pav bhaji masala , mix it well.
I add little water to make it semi thick gravy type.
Mash the gravy with potato masher to get creamy taste…and if any big chunks a re there it is properly mashed n mixed.
Finally add chopped coriander leaves and lemon juice…
At last I add little butter…pav bhaji without butter incomplete you know.
Cut the pav into two slices.
Heat tava and add butter.
When it starts melting add bhaji to this and mash it…
if you feel the bhaji is thick, you can add little water.
Remove this bhaji to serving plate.
Then on same tava only take little more butter.
Place the pav and just move it all over the tava so that the pav is coated with leftover bhaji stay on tava.
Quickly turn it so that it is well coated with bhaji and it looks so colourful.
Sprinkle some coriander leaves and repeat the process.
Remove to the serving plate.
Garnish some chopped coriander leaves n chopped onion on bhaji,take some extra…with lemon cubes.
In this way if you prepare it taste same like street style n super hot…
You can add food colour also to get the colour of pav bhaji like street style,but I add only beetroot to get colour.
The main part is to add more tomatoes to get that tangy flavour.
As I cut veggie into cubes so I boiled then so that it is easy to mash…if you want you can grate it also.
After the bhaji done…mash it with the potato masher to get the creamy taste.
For getting colour in pav…I just place the pav with left over bhaji on tava with melted butter and we have to finish this process quickly o that pav is buttery and soft.
I have sprinkle coriander leaves on pav…but if you wish you can add the pav in melted butter too.
