Sambar I think everyone loves …my daughter favt too.Whenever I prepare sambar My hubby takes more quantity for office as his collegues like it so much…so thought to share how ‘I prepare this in home…simple n easy way.Initially my sambar turns to dark brown colour…so hubby telling me his southindian friends bringing sambar its yellow colour,initially I thought maybe this colour I get due to sambar powder,but later I got to know here the tamarind which  is available in Indian Shop is dark in colour comparing to India.So this time I told my friend Hiral n sis Reshmi to send me tamarind from India…and see my sambar is now full on demand and looks so yummy too…thanks to them.So lets get started

Here I add some organic veggie like tomato,raddish,French beans,carrot,sweet corn…this I got through my Indonesian friend Dian,so thanks to her.

Preparation Time 15 min
Cooking Time 40 to 45 min
Serving Persons  4 to 6


1 cup tuar dal(Boiled with salt,turmeric,oil n water)

1 cup of  pumpkin,cucumber,toamto cubes

1/2 cup of carrot,radish slices,french beans

12-15 shallots

1 corn cob cut into pieces

2 green chili slitted

2 tbsp chopped coriander leaves

1 tbsp kasuri methi

1/4 tsp turmeric powder

1 tbsp sambar powder

1 tbsp of tamarind soaked in water

Sat to taste1 tsp ghee

2 tbsp oil

1 whole red chili

12-15 curry leaves

2 tsp of pancha phoran

1/4 tsp asafoetida

Water to make the gravy

Soak the dal for 1 hour.
Then pressure cook the dal with salt,turmeric powder n oil..till 3 whistles.
Whisk the dal so that it is smooth.
Now take a big vessel,add the dal with hot water.
Add all veggies except ladies finger as it cooked faster.
Now let the veggies cooked for some time till it is cooked 3/4th.
Now add the ladies finger or bhindi to this.
After all veggies cooked,extract the juice from soaked tamarind and add this to sambar and let it boil for some time.
Now add little water to sambar powde rn mix it well.
Add this to gravy and mix it well.
Its done,add little ghee n chopped coriander leaves to this.
By adding ghee it enhances the flavour.
Make the tempering by heating oil ,add all tadka ingredients n curry leaves to this.
When mustard seeds start crackle,add this to smabar .
Finally rub the kasuri methi and add this to smabar to enhance the flavour.


The veggies I dint pressure cook…so that it retains its shape and flavour.
Here whatever veggie available I use those,you can add drumstick,brinjal.bottle gourd.
Always boil the dal and then add veggie,don’t add raw dal n veggie together, it takes more time and dal also not smooth.
Soak the dal for more time so that it takes less time to cook.
Whisk the dal after boiling to get a smooth texture.
I add little turmeric powder in veggie as I add this while cooking dal.
Add little oil while cooking dal,so that it will not spill out.
I added shallots here,if you wont find add big onion also.
Soak the tamarind for 25 to 30 min to get more extract.
If you are run out of time,oak the tamarind in hot water.
Initially the sambar looks watery,but when veggie cooked it absorbs the water and thickens the gravy.
I prepare this sambar for rice,if Your making sambar for idli,it has less veggie and small in size.
Cut the Ladies Finger into big chunks otherwise it is broken and seeds come out.
Add little water to sambar powder and add to gravy so that it is mixed well.
I have used Shakti Sambar powder,personally I prepfer this for its quality,aroma,colour.
