Preparation Time 10 min
Frying Time 3 to 4 min per batch
Serving Persons 4 to 6
1 cup besan
1/2 cup rice flour
1/4 tsp turmeric powder
1 tsp red chili powder
1/2 tsp cumin powder
1 tbsp oil
water to make a semi soft dough
Salt to taste
OIL to deep fry
Now take a bowl,add the besan n rice flour,I have taken the rice flour to make it more crunchy.
Now add all the spice masala to this,at last put some oil.
Here is the main tip to get the sev super crunchy,melt in mouth.
The trick is to mix the oil with the flour properly.
So that it is well incorporated with the flour mixture,rub the mixture with hands for 2 min atleast.
Now add water little by little to make a semi soft dough,the reason behind this is as sev chancha holes are very tiny,if we make the dough hard it can’t come out easily.
Now apply some oil on upper part of dough so that it remain moist.
Rest the dough for 15 to 20 min.
Now take the sevmaker,and apply oil on the cylinder part.
The reason behind this when we put the dough inside the cylinder,it will not stick and comes out easily.
Now fix the sev chancha on the bottom part of sev maker and put the dough with the help of a spoon so that it will not stick to your hand and close the lid.
Mean while heat the oil.
When oil is properly hot,press the sev amker and raw sev falls down easily to the hot oil.
Keep in mind the oil should be medium to low temperature.
For the design,you just turn around the sev maker and press it simultaneously.
Now after osme time,it floats in hot oi.
It’s the time to turn it,so that it is evenly fried from both sides.
When it turns light golden colour,remove to an absorbent paper so that excess oil can be drained out.
Sprinkle little black salt to enhance the flavour.
Make it cool down and store in an air tight container.

By adding rice flour the sev will be crunchy.
Addition of oil to the flour mixture makes it more crunchy,just melt in mouth.
Prepare the dough semi soft,so that it is easier to pour the dough in hot oil.
As the sev chancha holes are so tiny.it is difficult to press if we make the dough hard.
If you want to add carom seeds,roast it and grind to a powder then use it in the flour mixture,otherwise it cant be removed from sev maker.
