Sooji Kakara this is requested by one of my viewer Rashmita…so this sweet recipe is dedicated to her.This one a famous pitha(sweet) recipe of Odisha…I prepare this without stuffing.But if you want to know the stuffing part some dayz before I” have uploaded Atta Kakara there I show how to make stuffed Kakara…the link I will give below.So lets get started this crispy crunchy Sooji Kakara. It is so easy and quick to prepare something different in sweet…
Preparation Time 10 min
Cooking Time 5 min per batch
Serving Persons 4 to 6
Ingredients
1 cup sooji rava
½ cup sugar
½ tsp fennel seeds
2-3 cardamom
2 cups water
1 tsp ghee
a pinch of salt
OIL to deep fry
Procedure
Boil water and add salt,cardamom,fennel seeds with ghee.
When it starts boiling add sugar and let it melts.
Next goes in the sooji…and stir it continuously to avoid any lumps.
Cover it and let it cook for 2 min in low flame.
Turn off the flame and stir it.
Remove to a place and let it cool down little.
Apply oil on your hands and knead this to a soft and smooth dough…it takes about 5 min.
Heat oil for deep frying.
Rollt he dough and make lemon size portion out of this.
Smoothen it and make dumplings.
Now flatten it with light hands with help of palm.
So that it is evenly flattened.
Do the rest dumplings.
Put one by one kakara in the hot oil and deep fry till it turns into golden colour.
Turn the kakara in between so that it is evenly fried.
When it turns into golden colour…remove from hot oil.
It is initially soft…but after it cools down it turns to be crispy,crunchy due to presence of sugar.
Notes
I have added little ghee so that the sooji dough will not stick to pan.
Apply oil on hands and knead the dough to make it smooth and non sticky.
If you want to make it with stuffing just add 2 tsp of sugar in sooji and rest sugar you add in stuffing part.
Press with palm…so tha that is evenly flattened.
If you feel it is little difficult to flatten spread some oil on the surface and do.
Initially it is soft…but when it cools down it turns out crispy.
By adding salt to this sweet it makes it more flavourful and increase its sweetness.
You can have this without frying also as it is halwa texture.
