Upindi is nothing but rice upma Its mainly prepared in South India as my maternal place is boarder to Andhra most fooding style match with south-indian.This is one of them…Before marriage this is the dish i am full confident…After marriage also when we came to Pune this is the first dish i prepared.
The rawa for this upma readily available in Odissa n South of India,u can make this with idly rawa which is product of South part…Because my sis who is staying in Bangalore sent the idly rawa from which i made this upindi it comes out good(My mom gave the idea of this idly rawa)
Making of Upindi Rawa
Soak rice for 4 hrs.Drain whole water n dry the rice completely on a cloth for 1hour so that it will broken inside.
Now grind it rough n seive it so that powder form will be removed from the granules part.
Dry these rawa for 1 hour and store it .
1 cup upindi rawa
2 cups water
2 tsp oil
1 tsp mustard seeds
1/2 tsp cumin seeds
1/4 tsp udad dal
1 tsp chana dal
a pinch of hing
1 red chili whole
3 green chili slitted
8-10 curry leaves
1 tbsp moong dal
1/4 cup corn
salt to taste
chopped coriander leaves for garnishing
Heat oil,add mustard seeds.
When it start crackle add cumin seeds,green chili,curry leaves,hing,udad dal,red chili.
Now add chana dal,when it urns golden,add water,moong dal,corn n salt.
Cover the lid,when water start boiling add the rawa,keep boiling in high flame for 1 min.
Stir it properly,make flame low,cover the lid again for 7 min.
Now stir it again,garnish with coriander leaves.Serve hot…
