Preparation Time 10 min
Cooking Time 3 to 4 min per uttapa
Serving Persons 4
1 cup leftover rice
1/2 cup poha
1/2 cup rice flour
1/2 cup curd
3-4 green chili
1 tsp baking soda
water to make batter
Salt to taste
OIL to make dosa
Add all the ingredients to the cooked rice except salt and baking soda and make a thick paste.
Then add more water to make it semi thick consistency.
Now add salt and baking soda to the batter,mix well.
Healt the tava and coat it with oil.
In low flame pour two ladle full of batter and spread it slowly.
So that it forms a uttapa shape.
Cover a lid,after some time it is cooked and leaves the tava from all sides.
Turn it and pour some more oil and let it cook from other side also.
When it turns golden colour,insert the spatula carefull to remove the uttapa from tava.
In this way prepare rest uttapas and serve with your favourite chutney.
As it is instant uttapa,we have no time for fermentation.
So I have added baking soda for instant formation so that the uttapa remains fluffy.
You can prepare with the fresh cooked rice also,or sometimes the rice is so soft then also you can prepare this.
