1 cup udad dal
2.5 cups rice
1 handful poha
6-8 fenugreek seeds
salt to taste
chopped green chili
chopped coriander leaves
oil to make uttapa
Soak rice,udad dal,poha with fenugreek seeds for 6 hours.
Make a smooth paste n keep for fermentation overnight in a warm place.
The batter will be double in volume,add salt now.
Heat tawa,spread oil.
Take one big spoon of batter n pour at center of the tawa,rotate the batter slowly in circular shape.
It should be thick in size,now put all veggies n cover it.
Turn it n spread little more oil.
When all veggies turn little golden color,remove from tawa.
Serve hot with chutney…
