Hakka Noodles who doesn’t like…from kids to adults everyone all time favt…Specially my daughter Sarthika.Whenever we visit restaurant her first demand is hakka noodles…actuall friendz from few dayz she is not feeling well so cant have food properl so I thought why not try this and surprise her

When she returned from school and got to know in lunch she has hakka noodles…a big smile comes to her  face and to my utter surprise she told me cans he have one more time…a big relax comes to my face.And with this I did the recording also…so

Lets dig into recipe detail

Preparation Time 15 min
Cooking Time        15 min
Serving Persons      4

Ingredients Required

250 gm hakka noodles

2 medium onion cut into thick slices

1 cup cabbage shredded

1/4 cup shredded carrot

1/4 cup french beans cut into slantwise

1 cup yellow,red and green capsicum cut into slices

1 tbsp chopped garlic

1 tsp chopped ginger

3-4 green chili chopped

1  tsp black pepper powder

1/2 tsp ajinomoto

1 tsp red chili flakes

3 tbsp tomato sauce

2 tbsp chili sauce

2 tsp sweet soya sauce

1/2 tsp sour soya sauce

8-10 drops of vinegar

4 tbsp oil

Salt to taste

Procedure

Boil the water with salt and 4 to 5 drops of oil.
When it start boiling add the noodles to this.
Boil it for 5 to 7 min maximum otherwise it will stick to each other while added to veggie mixture.
Now strain the hot water,add normal water with little oil.Make it cool down.
Meanwhile heat rest oil in wok,when it is properly hot add chopped garlic,ginger and green chili.
Saute for 30 sec,add onion and cabbage with little salt so that onion sweats first and cooked.
Remember the flame should be high ,so that all veggie is cooked but retains its crunchyness.
Now add the carrot,frenchbeans,sauté for 2 min.
After this add coloured capsicum and repeat the process.
Now add all sauces with ajinomoto,blackpepper powder,red chili flakes.
Mix this properly.
Strain the aboiled noodles and add to the veggie mixture.
In high flame mix these,afte 3 to4 min It is done.
But here comes the trick to get it restaurant style.
In the same wok,heat little oil.
Add a portion of noodles and again sauté it for few more minute to get its cunchyness.
In our home all preferred it little crispy,so I put the flame on for few more minutes.
For a party also ,you can prepare before time.
When It is serving time,follow the process of reheating and sauté…to get it restaurant style.
Believe me it is superhit.

Notes

You can add a number of colouful veggies here like purple cabbage,beetroot,spring onion…
Add the sesame oil to enhance the flavour.
Saute in high flame…to get the crunchyness.
Always cool down the boiled noodles and add to the veggie mixture.
